■ Appetizer: Octopus and green seaweed carpaccio with colorful tomatoes and Chita flowers vinaigrette
■ Soup: Parisoir, with water shield floating in it like a jelly

・Steamed sea bass stuffed with champignon duxelles and steamed in white wine with saffron risotto and sauce choron
